This bowl is meal prep in it's highest form. Make all of the components when you have time over the weekend, then assemble into bowls throughout the week. Dinner will take 5 minutes - tops!
Roasted Vegetable & Chickpea Nourish Bowls with Romesco Sauce
Serves one (or as many as you'd like!)
1-2 cups roasted vegetables (I like zucchini, cauliflower, and carrots)
1/2 cup quinoa or brown rice
1/3 cup cooked chickpeas (canned is totally fine!) or protein of choice
1-2 Tbs. parsley or cilantro, roughly chopped
1 Tbs. toasted almonds, roughly chopped
Heat up the vegetables, rice, and chickpeas in a shallow bowl. I honestly use the microwave most of the time. Use the toaster oven for the vegetables if you prefer.
Top with a big dollop of romesco sauce and sprinkle with the herbs + almonds. Then eat!
