This oatmeal is one dish I'm sure to make over the weekend. Warming, comforting, nourishing, and filled with foods to reset my tummy after all of the vacation eats and little indulgences :-)
Golden Milk is a blend of turmeric, spices, and nut or coconut milk - simmered together into a warm drink. For this recipe, I just took it a step further and made oatmeal out of it! Turmeric is a powerhouse supplement that fights inflammation and helps neutralize free-radicals and oxidative stress in the body.
Golden Milk Coconut Oatmeal
1/3 cup rolled oats
1 tsp. chia seeds
1/3 cup water
1 tsp. virgin coconut oil
1/2 cup cashew milk (or milk or choice)
1/2 tsp. Gaia Golden Milk (or turmeric powder with a pinch of cardamom)
1/4 tsp. cinnamon
1/2 banana, thinly sliced
pinch fine sea salt
2 Tbs. coconut flakes, toasted
1/2 banana, sliced
Optional: In a small pot, soak the oats and chia seeds in 1/3 cup water for 15-20 minutes. I do this while getting ready in the morning as helps everything cook quicker. Otherwise, just add these ingredients to the pot with everything else as written below.
To the soaked oats, add the coconut oil, cashew milk, Golden Milk blend, cinnamon, sliced banana, and a pinch of sea salt. Bring to a gently bubble, then reduce to simmer until the oats are soft and creamy (4-5 minutes if soaked first, 5-8 if not soaked). Use a spoon to stir occasionally and mash up the banana.
Transfer to a bowl and top with additional sliced banana and toasted coconut flakes.
