Banana Berry Nice Cream

I posted this photo to Instagram the other day, and it got A LOT of love. More love than I was expecting actually! 

So, I figured since I don't have a nice cream recipe on the blog yet, I'd post this one. It isn't really a recipe at all though. Just frozen bananas and berries blended until smooth and creamy (like ice cream), then topped with whatever your heart desires - chocolate, peanut butter, granola, coconut...

Okay, maybe I do understand what all the fuss was about! I apologize for holding out on you for so long.

Banana Berry Nice Cream

Serves one, but easily doubled

1 banana, frozen in chunks
1/2 cup frozen mixed berries

In a high speed blender or food processor, blend and pulse the frozen fruit until thick and creamy. Approximately 1-2 minutes, pushing down the sides as needed. My Vitamix has a frozen setting that works great. Use the tamper to push the fruit towards the blades.

Peanut butter
Almond butter
Shredded coconut
Cacao nibs
Granola
Hemp seeds
Fresh berries
