Massaged Kale Salad with Avocado, Hemp Seeds, and Ume Plum Vinegar
1 recipe Massaged Kale Salad
1/2 avocado, diced
5-6 dashes ume plum vinegar*
1 Tbs. hemp seeds
1-2 Tbs. pumpkin seeds
Add diced avocado to basic salad recipe. Massage with your hands until avocado has broken and is coating the kale like a creamy dressing. Add ume plum vinegar, to taste, and massage again. Transfer to serving bowl and top with hemp + pumpkin seeds.
Serve with remaining half of avocado sliced on the side.
Ume plum vinegar is a Japanese staple made from the pickling liquid of umeboshi plums. It's tart and a bit salty. I love it, but if it's not easily available, feel free to use Bragg's raw apple cider vinegar instead.
To bulk up this salad as a meal, add a 1/2 cup quinoa per serving.
