I restarted Leota Melinda a little over three months ago.  I am beyond thrilled and humbled by the community that’s already being created.  It gives me purpose and the drive to create even more content.  One of my top goals for 2017 is to continue growing this community – to create a supportive dialogue and demonstrate how eating a nourishing plant-based diet can be easy, satisfying, and tasty.

To start January off right, I thought I would take you through my personal reset this month. December can throw us all off track – even those with the greatest intent and dedication.  Balance is important, and there is absolutely nothing wrong with enjoying time, drinks, and eats with those you love.  But balance is also getting back on track and refocusing on health and wellness.

I plan to show you my grocery hauls, what I’m batch cooking Sunday nights, weekday lunch prep, and how we get dinner on the table when working late.  And of course, there will be numerous nutrient rich, plant-based recipes posted as well.
