raspberry cardamom overnight oats

Overnight Oats are more of a warm weather breakfast staple, but I just love how easy they are to grab and go in the morning. This version is a nice seque into cooler temperatures.  A touch of cardamom adds a note of warmth to the tart raspberries and offers a welcome change from the standard cinnamon.

Raspberry Cardamom Overnight Oats

Serves 1

1/3 cup rolled oats
1 Tbs. chia seeds
2/3 cup kefir or 1/2 cup cashew milk
1/8 tsp. cardamom
1/8 tsp. cinnamon
1/2 tsp. honey or maple syrup
1/3 cup frozen raspberries

Mix all ingredients, except raspberries, together in a mason jar or other container with a lid until thoroughly combined. Gently mix in raspberries.  Cover, and let sit in the refrigerator for a minimum of 2 hours, but overnight is ideal.  Grab and go in the morning for an easy, nourishing breakfast. 

I love to finish my oats with extra raspberries, toasted coconut, chopped pistachios, and a drizzle of honey.  A dollop of almond butter makes them extra creamy.  


This recipe can be easily doubled.
