This is the quickest weeknight meal. I use Trader Joe's frozen Organic Brown Rice, and the dish literally comes together in minutes. Serve with a side of steamed broccoli or quickly sautéed spinach, and you're set.
Garlic Ginger Fried Rice
1 Tbs. olive oil
1 Tbs. garlic, minced
1 Tbs. ginger, minced
2 scallions, finely chopped, whites and greens separated
1/8 tsp. red pepper flakes
2 cups brown rice
2 fried eggs
Heat a nonstick skillet to medium. Add olive oil, garlic, ginger, the white and light green parts of the scallions, and red pepper flakes. Sauté 2-3 minutes until fragrant and just starting to brown. Add rice and incorporate well. Cook another 2-3 minutes until heated through.
To serve, divide rice between two bowls and top each with a fried egg and the remaining scallion greens.
