I’m Erin Parekh, a Holistic Health Coach and inspired home cook.
Leota Melinda is the product of my two passions - sharing wholesome, health-supportive recipes and helping others achieve their wellness goals.
For as long as I can remember, I've been excited to be in the kitchen. It is a place of creativity and meditation for me. Through my own personal up and down relationship with food and various digestive issues, I’ve learned to use my passion for cooking to nourish my body with whole, living foods while also balancing that little thing called life.
It wasn’t until ten years after college though that I became a health coach. I was pre-med until junior year and suddenly decided to swap my major to art history! I ended up moving to New York for graduate school and working for several high end mega galleries. My science background was always nagging me though (I graduated with biology and chemistry minors!), and I toyed with going back to school for years. Then, I heard about the Institute for Integrative Nutrition and the rest is history. The school’s coaching philosophy perfectly combined my love of cooking and sharing whole foods with nutrition science and holistic heath practices.
Currently, I live in Stamford, CT with my loving husband Ravi.

My Food & Wellness Philosophy
I truly believe that living whole and eating well are innate and deeply rooted in our souls. As a culture, we've drastically veered off course when it comes to listening to and nourishing our bodies. We eat breakfast on the run, lunch at our desks, and watch television during dinner. We're treating diseases with medicine rather than preventing them with nutrition. It’s no coincidence that the acronym for the Standard American Diet is S.A.D. We need to get away from processed foods and back to what our great-grandparents ate. We need to slow down and enjoy the beauty that is life.
Eat Well. Live Well. Be Well.
It is my goal to prove to you that eating for health doesn't have to be boring, restrictive, or expensive. You don't have to drink green juice daily or spend hundreds of dollars on superfood powders and supplements to be well.
The path to health begins in the kitchen with simple, whole food ingredients. Once you start adding more vegetables, slowing down at dinner, chewing your food, and cutting out the processed junk - a lot more will happen than just losing weight. Your mood will improve, you'll be sleeping better, and your outlook will completely change. Things will start falling into place in every aspect of your life.
I know all of this because I was once where you are now. I've been there. I've done that. And I've come out the other side with the tools and the training needed to help YOU on your journey.

Who is Leota Melinda?
Leota Melinda is my grandmother (aka: Gee). This blog is a tribute to her love of food and family - always best when enjoyed together. Her door was continuously open, and she inspired many with her gracious, welcoming spirit. I adored her, and only hope that one day my light in this world will be just as bright as hers.
